Linden Flower Probiotic Drink to Refresh You in Summer

On hot summer days, our body craves natural, refreshing drinks. While elderflower drink is the star of fermentation, we invite you to discover an equally delightful alternative: fermented drink made from linden flowers. Aromatic, soothing, slightly fizzy, and with therapeutic benefits, this drink is a liquid treasure, perfect for scorching days.


Ingredients (for ~4 liters of drink):

  • 4 liters of still water, boiled and cooled

  • 40-50 fresh linden flowers, recently picked from unpolluted areas

  • 2 organic lemons, well washed, sliced (or juiced, according to preference)

  • 150-200 g raw honey, added only after the water has cooled

  • (Optional) 1-2 slices of fresh ginger or a few leaves of mint

  • (Optional) 1-2 dried dates or a few raisins to stimulate natural fermentation

  • A pinch of yeast for a slow, healthy, controlled fermentation


Preparation Method:

  1. Choose fresh and fragrant linden flowers, picked in the morning, from clean areas. Do not wash them except lightly, as the pollen contributes to the taste and fermentation.

  2. In a large glass container, place the linden flowers, lemon slices, and optionally ginger or mint.

  3. Add the boiled and cooled water.

  4. Add the honey only after the water has completely cooled, to avoid destroying the enzymes and therapeutic properties.

  5. If desired, add dates or raisins to support natural fermentation.

  6. Cover the jar with cheesecloth or a loosely placed lid; the liquid needs to breathe.

  7. Let it ferment for 4 to 6 days, at room temperature, in a shady and cool place.

  8. Stir daily with a wooden spoon.

  9. Taste after 3 days. When the drink is slightly fizzy, fragrant, and sweet-tart, it is ready.

  10. Strain it through fine cheesecloth and bottle it in airtight bottles.

  11. Store it in the refrigerator and consume it within 2-3 days.

Contraindications:

  • Not recommended for individuals with diabetes or those following low-carbohydrate diets, as honey contains sugars.

  • Not to be given to children under 1 year, due to the risk of botulism from raw honey.

  • Pregnant women should consult a doctor before consumption, due to the sedative effect of linden.

  • Individuals with pollen allergies or sensitivity to plants in the Tiliaceae family should avoid this drink.

  • If the drink develops an unpleasant smell or a strong bitter-sour taste, do not consume as it may indicate contamination or excessive fermentation.
