Ingredients
5 kg green tomatoes
1 celery with leaves
1/2 kg carrots
1 bunch horseradish
5 tablespoons coarse salt
5 liters water
peppercorns (optional)
1 head of garlic
1 bunch dried dill
1 bunch dried thyme
1-2 hot peppers
Preparation Method
Wash the green tomatoes and hot peppers and let them drain.
In the meantime, peel the carrots, garlic, celery, and horseradish, and wash them well. The hot pepper, carrot, celery, and horseradish are cut into strips so they can be interspersed among the green tomatoes already placed in the containers.
If desired, the carrot can be sliced into rounds. On top, add celery leaves, dill, and thyme.
For the brine, add one heaping tablespoon of coarse salt for every liter of water. In a pot, bring 5 liters of water to a boil and add the salt to dissolve.
Pour the warm brine over the green tomatoes and let it cool. If there is not enough brine, prepare more.
The next day, top up with brine if necessary, seal the containers with the green tomatoes tightly, and store them in the refrigerator.
