Mămăliga, a good substitute for bread Mihaela Bilic: It is the perfect side dish

Three tablespoons of mămăligă equal one slice of bread. We are talking about starch, which is absorbed slowly into the bloodstream and is the best option for carbohydrates.

The benefits of mămăligă

Our grandparents ate mămăligă daily, and they kept it for bread and cakes during holidays. Cornmeal is part of the slow carbohydrates category, containing starch that is gradually absorbed into the bloodstream, helping us feel full for 3-4 hours.

On an ideal plate, mămăligă occupies 1/4 of the surface and is the perfect side dish for meat, stews, cheese, or eggs. It is an alternative to bread, pasta, rice, or potatoes. Additionally, it does not contain gluten and helps prevent bloating, but it is as filling as any other food.

Correct serving

A slice of mămăligă is equivalent to a slice of bread and has 70-80 calories. If we are talking about hot mămăligă, consider 3 tablespoons for one slice.

Mămăligă and health

In terms of benefits, corn contains many carotenoids, which give it its bright yellow color. These plant pigments have antioxidant roles and are essential for the synthesis of vitamin A, which helps with skin and vision health. Additionally, the high fiber content in mămăligă makes it ideal for intestinal transit issues.

Corn-based products

Corn puffs and cornflakes are also made from mămăligă. Americans invented them to encourage cereal consumption at breakfast, and this habit has conquered the whole world.

Moreover, corn puffs are expanded, puffed with air, which gives us the impression that we have eaten a lot. Additionally, most cornflakes do not contain sugar, but they are not calorie-free: a serving of 30g (a heaping cup) has approximately 110 calories.

Another delicious corn-based product is fried mămăligă, tortilla chips. These have a higher energy value, 480 calories per 100g. Therefore, the correct serving size is reduced to 25g (almost a fistful).

Mămăligă today

Times have changed, and our grandparents’ mămăligă has evolved. However, I don’t believe there is a Romanian who does not love mămăligă with cheese and sour cream or a bulz with baked cheese.
